Have you ever heard about Tapenade, the Mediterranean olives’ puree? If not you should absolutely give it a try! Spread it on a toast of bread with some dried tomatoes and enjoy!
- 300 g black olives
- 100 ml extra virgin olive oil
- 1 garlic cloves
- 1 lemon juice
- 50 g capers
- Mix undrained capers with 50 g black olives, lemon juice and garlic.
- Add 250 g black olives. Mix a bit (it does not have to be liquefied).
- Finally, add olive oil and enjoy!
Tapenade is not only delicious, it is also rich in nutrients due to olives. They contain healthy (monounsaturated) fat that helps increase the good cholesterol, help you lose weigh. They have anti-oxidants and anti-inflammatory properties and are a good source of iron, copper and vitamin E. In the Becoming Vegan book it is also stated that:
Oleuropein, the major polyphenol in olives, is a potent free radical scavenger, inhibiting oxidative damage in body cells and protecting heart tissue. Both olives and olive oil contain bioactive compounds with known anticancer effects, including lignans, squalene, and terpenoids. Extra virgin olive oil is also rich in a polyphenol called oleocanthal, an anti-inflammatory agent.
